“October events in our village are now an institution”
28η October 2025: Wood-fired Italian pizza with trachana, we say NO to the ordinary
Keeping his promise, the Cultural Association of Homorites Worldwide organized an autumn gastronomy festival again this year. Trahana had the place of honor. The first day's event, Sunday, October 26, began with the laying of wreaths in the rain at the War Memorial in the village square. About 80 people gathered in the courtyard of the coffee shop and put the ingredients in the cauldron: 20 liters of water from the Megali Vrysi, 5 kilos of trahana, butter, salt, and an oka of feta cheese.
Οι συμμετέχοντες ευχαριστήθηκαν ζεστό τραχανά, πίτες, σουβλάκια και γλυκά, συνοδεία τσίπουρου και ντόπιου κρασιού. Η συνέχεια δόθηκε κάτω από τα κιτρινοπράσινα φύλλα των μουριών, με χορό και τραγούδι. Στην πλατεία ο φίλος μας Κώστας Ζιαμπάρας από τον Άγιο Δημήτριο είχε στήσει τον πάγκο του με παραδοσιακά κραβαρίτικα προϊόντα, κάστανα, μαρμελάδες, λικέρ, ρίγανη και άλλα – τυχεροί όσοι πρόλαβαν!
Την επόμενη μέρα τη σκυτάλη πήρε ο Κάτω Μαχαλάς, με πρωτοβουλία της Αντιπροέδορυ του Συλλόγου, κυρίας Κατερίνας Εγγλέζου – Τρόλια. Από νωρίς ο φούρνος στο αλώνι γέμισε με καυσόξυλα και όλοι οι χωριανοί μαζεύτηκαν στο κιόσκι με ανεβασμένη διάθεση και ανυπομονησία. Η γραμμή παραγωγής της χομορίτικης πίτσας λειτούργησε άψογα : άπλωμα το ζυμάρι, πέρασμα με ντόπια σάλτσα ντομάτας, πλούσιες στρώσεις υλικών, φούρνισμα και διανομή. Οι μουσικές επιλογές κινήθηκαν σε μοντέρνα παραδοσιακά ελληνικά ακούσματα, ιταλική μουσική δωματίου, βαλκανική λαϊκή μουσική για να καταλήξουν τελικά στα αγαπημένα μας κλαρίνα και τις χορευτικές φιγούρες. Ο Άη Θανάσης και τα μαντριά σημείωσαν ρεκόρ επισκεψιμότητας, ενώ οι πιο τολμηροί κατέβηκαν μέχρι τον Κότσαλο.
Οι νέες και διαφορετικές εικόνες που αποτυπώσαμε, οι μουσικές που ακούσαμε και τα εδέσματα που γευτήκαμε θα μας συντροφεύουν μέχρι τα επόμενα!
October 28, 2025: Italian Pizza in the Wood-Fired Oven with trahanas soup — Saying “NO” to the Ordinary
Keeping its promise, the Cultural Association of Homori once again hosted its autumn celebration of gastronomy — this year honoring the humble trahanas. The festivities began on Sunday, October 26, with a wreath-laying ceremony in the village square, under a fine drizzle, at the Monument to the Fallen. Around eighty of us gathered in the courtyard of the old Kafeneio and got to work at the cauldron: twenty liters of water from the “Great Spring,” five kilos of trahanas, butter, salt, and a full oka of feta cheese. The result? Bowls of steaming trahanas, savory pies, souvlaki, and desserts — all served with tsipouro and local wine. As the afternoon wore on, dancing and singing broke out beneath the yellow-green mulberry leaves. In the square, our friend Kostas Ziamparas from Agios Dimitrios had set up his stall, overflowing with local Kravarian delicacies — chestnuts, jams, liqueurs, oregano, and more. Lucky were those who managed to grab some before they ran out!
The next day, the festivities moved to Kato Mahalas, at the initiative of the Vice President of the Association, Mrs. Katerina Englezou-Trolia . By early morning, the old oven at the threshing ground was blazing with firewood, and villagers gathered eagerly under the gazebo, ready for action. The Homori pizza production line worked like clockwork: dough rolled out, brushed with homemade tomato sauce, layered generously with toppings, baked to perfection, and served hot to the crowd. The soundtrack to the day was as eclectic as the flavors — from modern takes on Greek folk tunes and Italian chamber music to lively Balkan rhythms, and finally, the familiar clarinets and traditional dances we all love. Agios Athanasios and the nearby sheepfolds saw record numbers of visitors, while the more adventurous trekked all the way down to Kotsalos River.
